Noodles are steamed rather than stir-fried. I think they came out pretty good.
The meat is porkbutt.

Might I suggest using black beans next time? Be sure to strain them and maybe fry for a few, or they’ll dye your noodles black.
They’ll add a nice contrast & they taste SO good in a dish like this!

looks amazing!!! never thought of steaming noodles before, my guess is you can only do so with fresh noodles??? like you always see used on the cool noodle recipes lol
It was fresh noodles, laid down as a thin layer over the broth, then simmered until all the liquid has evaporated.
